Getting a cake home in Bangkok heat
Four simple rules from the counter to your fridge.
Fresh cream hates heat. Twenty minutes in a car without air-con is enough to spoil the piping.
1. Cool the car first
Run the air-con before the cake goes in.
2. Flat on the floor
Not on a seat or a lap — the floor is flattest and steadiest.
3. Go straight home
No errands on the way. Keep the cake out of the fridge for less than an hour.
4. Middle shelf
Take it out 20 minutes before cutting.
